Tailgating With Frito-Lay!

Tags: , , ,

When I think of Frito-Lay and autumn foods, I remember the yummy Tamale Dip my mom prepares by the crock-pot full when she needs to feed a crowd.

“Tailgating” isn’t normally about healthy eating, but Frito-Lay wants to help you get off the greasy train with portion control sizes for enjoying old favorites in moderation.

You can also make simple changes like offering dips made with reduced-fat sour cream or positive nutrition like salsa or guacamole, or cooking with lean turkey meat and fat-free refried beans to cut hundreds of calories off your meals.

Frito-Lay wants to hear tips from Mom Most Traveled readers!

We are calling it the Better-For-You Tailgate Recipe Contest, and you can win a Frito-Lay Tailgating Kit (approximate value: $50) equipped with better-for-you Frito-Lay products, a gift card for purchasing your ingredients and a neat football shaped dish.

To enter, share your better-for-you recipe in the comments below. The winner will be selected based on healthiness, taste, and incorporation of Frito-Lay products.

(Frito-Lay products can be included in a number of ways, either IN the recipe such as Frito-pies, a Tostitos-base in taco salads dishes/dip, or various other Lays chips used for “dipping” the recipes. Or be creative, these are just a few ideas!)

Healthy snacking, everyone!

This contest will be closed on Tuesday, November 10th, and the winner submited to Frito-Lay by Thursday.

This give away is open to US residents.

Contest closed and winners notified!

This is how I prepare avacado.

Peel and mash a really ripe avocado. Add salt and pepper to taste. Add a clove of garlic using a garlic press. Add a capful of lemon juice and two tablespoons or more of extra virgin olive oil. Mash until soft and creamy.

Here’s my healthy guacamole dip recipe which I am having tonight actually, with my favorite chips, Tostitos Bite Size Rounds.

Peel and mash two ripe avocados with a teaspoon of RealLime juice. Add a sprinkle of garlic salt and two tablespoons of high quality salsa. I use Zukay Salsa because it is fermented and has live probiotics which are very healthy for you.

Has to be Frito pie, two bowls, chips in each bowl, microwave a can of Hormel turkey chili, pour on chips, add cheese and onions. Probably not real healthy, physically, but does wonders for the need for a comfort food.

A great Healthy snack is a Fiesta Fruit Salsa, it goes perfect with salted Tostitos.
What I put in to my Fruit Salsa is:

    2 Cups of chopped cranberries
1 small apple, peeled, cored and finely chopped
1small pear, peeled, cored and finely chopped
1 orange, peeled, seeded, sectioned and finely chopped
    1 shallot
    1 green onion
1 or 2 chopped jalapeno peppers
    1/3 cup sugar
    1 T lime juice
    1T white wine vinegar

    This recipe makes 3 cups.
With all these ingredients mixed together the only food suitable for it is some salty tortilla chips for dipping. There’s nothing better than Tostitos. What a perfect tailgating treat!

We don’t do the no-fat, low-fat stuff here since high activity levels will burn that off, but this can easily be altered for those who do. Layer 8 ounces of cream cheese, Hormel no-bean chili (I prefer half the can instead of the whole can required), topped with shredded Mexican cheese and baked until cheese is bubbling but not brown. Dip Tostitos in it.

I like to make a multi-layered bean dip. If there are ingredients you don’t have or don’t like, leave them out.

On a good sized plate or glass pie pan, spread in the following order:

    1 1 lb can fat-free refried beans
1 c lowfat sour cream (because fat-free tastes like chemicals)
1 8 oz can yellow corn, drained
    1 c chopped fresh tomatoes
1 small can black olives, drained
1 c grated cheddar or jack cheese (use pepper jack if you like it spicy)
Drip taco sauce over the top.

Serve with Tostitos Natural Blue Chips or your favorite Frito-Lay corn chip product.
