I was so proud of myself today because I did something new. New and DOMESTIC. I found this really really easy recipe for making jelly and jam out of fruit juice. And I noticed that making jelly this way would be cheaper than buying pre-made jelly.
Another good thing about the recipe is that it contains no added sugar or gelatin. I was so pleased with myself. When my husband picked up Jojo from preschool, he said that Jojo made jelly at school today, too. What are the odds?
Combine in a saucepan. Let sit 2 minutes. Bring to boil. Reduce heat and simmer 1 minute or until agar is disolved, stirring frequently. Pour into container, cover and chill. Keep refrigerated.
That was so easy, I went and tried a SECOND recipe. (Oh no she DI’-IN!) Girl! I did!
2 cups unsweetened grape juice
1 cup raisins
3 TBSP + 1 tsp cornstarch
pinch salt
Blend all ingredients on high until smooth. Pour into saucepan and cook over medium-high heat stirring constantly, until thick and clear. Pour into covered jar or container.
So now I have a bagillion jars of jelly and jam in the fridge. Okay, actually I filled two 4 oz baby food jars, one 16 ounce jar, and one half of an empty 1lb peanut butter jar. But still, that’s lots.
I do like to cook, but the problem is that I am lazy. Yes, it’s true. But every once in a while I get a burst of culinary inspiration and I spend most of the day cooking. Like today. Along with the jelly and jam, I made about 18 veggie burgers from scratch and put them in the freezer for future meals. And I made oven fries, too. But I had stale bread and tomatoes for lunch. And tomorrow I’ll probably go easy on myself and make spaghetti for dinner.
